I have a saturn, but I've only played Nights and SF Alpha 2.
I'd like to know what other games are must haves on this system?

Dragon Force!
any Panzer Dragoon game
Mega Man 8/X3/X4 all three games ROCK.
Guardian Heroes
Radiant Silvergun (expensive)
Sexy Parodius (come on I love this one!)
Castlevania X (expensive, japanese, well worth it though)
any Sonic game just because its Sonic
Legend of Oasis
Die Hard Arcade
Bubble Bobble Collection (just because I love Bubble Bobble, and the supped up versions of rainbow island is fun... DAMN THAT HELICOPTER)
Earthworm Jim 2 (its a lot better then the genny one, nicer cleaner graphics, faster, and the backgrounds in "puppy love" are soooo hot lookin')
There are a lot more, but thats a nice starter for ya.
I'd advise you chipping it too, 15 bucks will get you a chip from Racketboy over at SX (who I can vouch for, nice guy) and you can play those expensive games like Radiant Silvergun and Castlevania X. The Saturn is one of my fav systems but there is a lot of poo games for it so its nice testing em' before buying.

Even when you don't import, though, there's oodles of underappreciated classics. Astal, Solar Eclipse, Enemy Zero, Thunderstrike 2, Mr. Bones, Norse by Norsewest... mmmm tasty.

I have a complete boxed Saturn in mint condition just collecting dust in my closet. I think there's a memory cartrigde and I have one game, Wing Arms that sucks. I would trade this for a couple good complete Genesis games, or like one complete Koei game....

Hanagumi Taisen Columns (import)
Columns with cute anime girls.
Sakura Taisen (import)
An excellent hybrid of strategy game and dating sim.
Sexy Parodius (import)
Maybe not the best shooter on Saturn, but at least one of the funniest.
Soukyugurentai (import)
Arguably the best non-overpriced shooter for Saturn.
Exhumed/Powerslave
A great egyptian themed FPS.

I agree that the Saturn has too many great games to just pick out five, but some of my favorites are:
X-Men vs Street Fighter (Import requires memory cart)
Thunder Force V (Import)
Guardian Heroes
Panzer Dragoon and Zwei
Shining the Holy Ark
These are just a few of my favorite games. I also really liked House of the Dead, even though it was pretty chunky stuff, and Daytona USA. Yeah, I know Ridge Racer looked better, but from a gameplay standpoint, Daytona was the clear winner for me. Wow. Thinking about all these great games makes me wish I'd never gotten rid of my Saturn.

Daytona USA is worth it just for the soundtrack.

Pretty good for Capcom/SNK styled fighting games aswell.
