I know that the Genesis main CPU is the Motorola 68000 and the sub CPU is the Zilog Z80 which is the "Brain" of the Master System that utilises the Master System Converter, the 32X and Virtua Racing, the SVP cassette. Which are the games that fully utilise the Z80 CPU?

There aren't many of them. Virtua Racing I believe is one of them.

Its not that the Genesis didn't have a z80, its that it had one that was stripped down.

he never said the genesis didn't have a Z80... also the genesis 1 had a full Z80 in there, the genesis 2 combined the z80 and the 68000 into one chip AND the Genny 3 stripped it down (reason why the GameGenie and Virtua Racer is REALLY buggy or plane ol' won't work on it). It's mainly because the Z80 is usually used by most of the games as its the sound processor for the genesis.

I hate mine, because I got a screw stuck in one of the screw holes, anyone know how to remove it?

I spent $7 for mine with a 3button pad, RF adaptor, AC adaptor and a Not for resale copy of Sonic, ages ago.
