I never watch Tv, but I seriously hate Canal+ as they only show commercial films from Hollywood and such. I would never watch anything from that channel, not even if I would get paid.
Tcm is quite good but their range of movies available here in Sweden is very small. It seems like they're showing Ben-Hur and White Heat every day or so here.

I don't really have favourites, despite being british for the american side i'll go for USA, HBO and AMC, a fair portion of the shows I watch are imported from there. NBC get a honorable mention for being good years ago but now, meh.
Least favourite is Comedy Central UK, other than South Park it shows shit like Two & A Half Men, Mike & Molly and 30 Rock. All of which are absolutely intolerable, apparently Comedy Central US is much better.
My favorite channel is BBC America for Doctor Who, Top Gear, documentaries, mini-series. I'll pretty much watch anything they air except Gordon Ramsey.
My least favorite is the worst channel of all time: G4. It started out with great shows like Icons, Filter, Arena, Pulse, Screen Savers, Judgement Day, Portal, even AOTS was good back in '05. Then it became too cool for games and is now a half assed Spike clone that airs cheap syndications.
You know who else loves Sega....
AMC is by far my number one at the moment, having both Breaking Bad (filmed in my town!) and Mad Men on it. And of course Futurama on Comedy Central. Other than that (Well, maybe Dexter), I don't really seek out other on air programming. Like most everyone here I have Netflix and other streaming options that I use. I watch TV mainly as an outlet to fill and waste time - which is what it's predominantly become, unfortunately.
