    Quality power supplies are simply expensive. Especially a three-in-one custom power supply, a good one could easily run $50. Your options are to either look and do some research for New Old Stock stuff, teardowns, or just stick with the official ones.
    If I do find good replacement power supplies nowadays I'm not likely to share that information, unfortunately. Hoarders and flippers have really messed up the market and generous sharing of useful info. I share as much as I can without making things worse. Sigh, I miss the good-ole days, before the flippers took over.

    You need to replace the DC jack to reverse the polarity, at least on the PSU, or the three on the splitter, if you want to reuse the PSU for other things.

    No specific recommendations, but IMO your best bet is to buy good quality supplies from suppliers that sell to industry (I use RS Electronics in the UK, for example). The Mega Drive et al use standard voltages and standard connectors, so if you make sure to buy supplies with the same voltage rating, at least the same current rating, preferably low amounts of ripple, and have the same type and polarity of connector (very important you don't mess this up), you're set.

    Majinga's suggestion looks like a pretty good one. Mean Well are a reputable PSU manufacturer.

    That is absurd because....? Prices triple on ebay overnight these days as soon as someone finds a good source. I knew someone that found the last old stock of some rare arcade power supplies for $50. What did he do? He bought 100+ of the remaining and sold them all for $250 a pop.

    Its a problem.
